This recipe is a great accompaniment to Fall/Winter tables. I like to use fresh corn, but frozen works just as well. If you don’t feel like roasting it yourself Trader Joe’s offers frozen fire roasted corn which works perfectly and is a timesaver!
I have written this recipe out using fresh or frozen corn so you could make this salad year round. The vinaigrette is delicious and one that my entire family enjoyed.
Ingredients
- 3 cups fresh or frozen (thawed) corn kernels or TJ’s fire roasted
- 1 ½ cup fresh or frozen, thawed blueberries
- 1 cup cucumber, diced
- ½ cup red onion, diced
- 2 tbsp. wine vinegar
- 1 tbsp. honey
- 2 tsp. dry thyme
- 1 tsp. Dijon mustard
- 1 clove garlic, minced
- ¼ cup olive oil
- 1-2 tsp SLOMIXX®
Directions
- Place corn, blueberries, cucumber and onion in a bowl
- Whisk together olive oil, vinegar, honey, thyme, mustard and garlic
- Pour dressing over salad ingredients
- Season with SLOMIXX® to taste
