Ingredients
- 1 cup wild rice
- 2 ¼ cup chicken broth or water
- 2 cups frozen peas
- 1 cup Dried cranberries
- 1 cup chopped celery
- ½ cup sliced green onion
- 1 cup toasted pine nuts or slivered almonds, ½ cup each
Directions
- Cook rice in broth for 45 minutes, let rest with lid on 10 minutes.
- Add peas, cranberries, celery, green onion, nuts
- Mix dressing pour over salad and toss.
- Chill until ready to serve. If made night before, add almonds the next day.
